Morning Glory Muffins


Morning Glory Muffins


Ingredients

  • 2 cups flour
  • 11/4 cup sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups grated carrot
  • 1/2 cup raisins
  • 1/2 nuts (optional)
  • 1/2 cup coconut
  • 1 apple peeled cored and grated
  • 3 eggs
  • 1/2 cup oil 
  • 2 tsp vanilla

 Optional. if available add one ripe pear crushed or one ripe banana. 

Instructions

  1. In a large bowl, mix flour, sugar, baking soda, cinnamon and salt.
  2. Stir in the grated carrot, 1/2 cup rainsins, nuts, coconut, and grated apple.
  3. In a small bowl, beat eggs, oil and vanilla.
  4. Stir eggs mix into flour mix until batter is just combined.
  5. Spoon into well greased muffin tins, filling to the top.
  6. Bake at 350F for 20mins or until ready.
  7. Makes about 14 large muffins.
