Morning Glory Muffins
Ingredients
- 2 cups flour
- 11/4 cup sugar
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 cups grated carrot
- 1/2 cup raisins
- 1/2 nuts (optional)
- 1/2 cup coconut
- 1 apple peeled cored and grated
- 3 eggs
- 1/2 cup oil
- 2 tsp vanilla
Optional. if available add one ripe pear crushed or one ripe banana.
Instructions
- In a large bowl, mix flour, sugar, baking soda, cinnamon and salt.
- Stir in the grated carrot, 1/2 cup rainsins, nuts, coconut, and grated apple.
- In a small bowl, beat eggs, oil and vanilla.
- Stir eggs mix into flour mix until batter is just combined.
- Spoon into well greased muffin tins, filling to the top.
- Bake at 350F for 20mins or until ready.
- Makes about 14 large muffins.
