Zucchini, Cheddar & Herb Damper
Ingredients
- 3 1/2 cups Flour
- 2 1/2 tsp Baking Powder
- 1 cup Greek Style Yoghurt
- 1 medium Zucchini grated
- 1 cup grated cheese
- 1 bunch Green Onions chopped
- 1/4 cup Oregano leaves or Parsley chopped
- 1/4 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Method
- Mix all dry ingredients together and make a well
- Mix in yoghurt and herbs
- Mix to form a shaggy dough
- Empty onto floured counter. Knead dough for 1 minute
- Rest for 20 minutes in covered bowl
- Divide into 10-12 portions, dust top with flour
- Bake at 200 C (375F) fan forced for 25 minutes or until golden brown
- Cool on tray
