Zucchini, Cheddar & Herb Damper

Ingredients

  • 3 1/2 cups Flour
  • 2 1/2 tsp Baking Powder
  • 1 cup Greek Style Yoghurt
  • 1 medium Zucchini grated
  • 1 cup grated cheese
  • 1 bunch Green Onions chopped
  • 1/4 cup Oregano leaves or Parsley chopped
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Method

  1. Mix all dry ingredients together and make a well
  2. Mix in yoghurt and herbs
  3. Mix to form a shaggy dough
  4. Empty onto floured counter. Knead dough for 1 minute
  5. Rest for 20 minutes in covered bowl
  6. Divide into 10-12 portions, dust top with flour
  7. Bake at 200 C (375F) fan forced for 25 minutes or until golden brown
  8. Cool on tray
