Cheese Sticks
Recipe yields 20-24 cheese sticks.
Ingredients
- 2 tsp. sugar
- 1 cup lukewarm (45C) water
- 2 packages active dry yeast
- 2 cups milk
- 1/4 cup sugar
- 1 tsp. salt
- 1/3 cup shortening
- 8-9 cups flour
- 3 cups grated cheese
Instructions
- Sprinkle yeast in water with 2 tsp sugar. Let stand for 10 minutes.
- Warm milk. Add sugar, salt and shortening. Cool to lukewarm. Add yeast and stir well.
- Add 1/2 of flour and beat vigorously and mix in KitchenAid until it all incorporates.
- Add the remainder of the flour to make a soft dough. Let the soft dough knead for 8-10 minutes in the KitchenAid.
- Add 1 cup of cheese, and let it incorporate in the KitchenAid.
- Place in a greased warm bowl; turn dough over to grease entire surface. Cover with greased waxed paper and a clean cloth. Let rise until double in bulk in a warm, humid place
- Knead it down.
- Form cheese sticks, and roll on the grated cheese.
- Place stick on parchment lined baking sheet and let them raise.
- Bake at 375F for 15-20 minutes.
Optional
Pepperoni Breadsticks
Roll dough into 1/4 thick rectangle, and cut into 1 inch wide strips. Roll pepperoni in strips, completely enclosing.
