Banana Crumb Muffins
Ingredients
Muffin
- 1 1/2 cup flour
- 1 tsp baking soda
- 1 tspn baking powder
- 1/2 tsp salt
- 3 large ripe bananas, mashed
- 3/4 cup sugar
- 1 egg
- 1/3 cup butter, melted
Topping
- 1/3 cup packed brown sugar
- 1 tbsp flour
- 1/8 tsp ground cinnamon
- 1 tbsp butter
Method
- Preheat oven 375F
- In a large bowl combine dry ingredients.
- In another bowl, combine bananas, sugar, egg and butter.
- Stir into dry ingredients just until moistened.
- Grease muffin tins and fill 3/4 full.
- Combine the first three topping ingredients. Cut in butter until crumbly.
- Sprinkle over muffins.
- Bake at 375F for 18-20mins or until golden brown.
- Cool in pan 10 mins before removing from pan.
