Cornmeal Muffins
Ingredients
- 1 cup flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup cornmeal
- 1/4 cup butter or margarine
- 1 egg
- 1 cup milk
- 1 1/2 cup grated cheddar cheese
- Black pepper
- Dried pepper flakes (optional)
- Green onions or regular onions (optional)
- Kernel corn (optional)
- Bacon, slightly pre-cooked (optional)
Instructions
- Stir together flour, cornmeal, baking powder and salt.
- In another bowl, beat egg, milk and softened butter.
- Add green onions, cheese, corn and bacon to wet ingredients.
- Add wet ingredients to dry ingredients and stir until moistened
- Fill greased muffin pans and bake at 375F for 15-20 mins or until golden brown.
