Cornmeal Muffins

Ingredients

  • 1 cup flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup cornmeal
  • 1/4 cup butter or margarine
  • 1 egg
  • 1 cup milk
  • 1 1/2 cup grated cheddar cheese
  • Black pepper
  • Dried pepper flakes (optional)
  • Green onions or regular onions (optional)
  • Kernel corn (optional)
  • Bacon, slightly pre-cooked (optional)

 

Instructions

  1. Stir together flour, cornmeal, baking powder and salt.
  2. In another bowl, beat egg, milk and softened butter.
  3. Add green onions, cheese, corn and bacon to wet ingredients.
  4. Add wet ingredients to dry ingredients and stir until moistened
  5. Fill greased muffin pans and bake at 375F for 15-20 mins or until golden brown.
