Green Onion Pancake

Makes 6 small pancakes

Ingredients

  • 2 cups Flour
  • 1/2 tsp salt
  • 1/2 cup boiling water
  • 1/4 cup cold water

Filling

  • 1/4 cup Flour
  • 1/4 cup oil (vegetable, olive or other) or melted butter
  • Dash of sesame oil
  • 1/2 tsp salt
  • Chopped green onions

Method

  1. Add flour and salt to a bowl
  2. Drizzle in hot water while mixing
  3. Add cold water and form into a ball and knead
  4. Cover and let rest for 20 minutes
  5. While dough resting combine flour, oil and salt in a bowl
  6. Chop green onions
  7. Knead dough then split into 6 balls
  8. Flatten into circles
  9. Spread on oil/flour mixture (leave one edge dry to close) and sprinkle on green onions
  10. Roll dough up into a tight log
  11. Roll log up into a tight circle and press down slightly
  12. Roll them back into flat circles
  13. Cook in oiled pan on medium/high heat until lightly browned on both sides
