Sweet Potato Bread

Sweet Potato Bread

Ingredients

  • 1 cup warm water
  • 2 packs (1 pack= 2 1/4 tsp) yeast
  • 2 tsp sugar
  • 1 1/2 sugar
  • 1 teaspoon nutmeg grated
  • 3tsp cinnamon
  • 1/4 pound butter or margarine (cut into small cubes)
  • 2 eggs
  • 1 cup milk
  • 11/2 tsp salt
  • 8 to 10 cups flour
  • 1 large peeled, boiled and crushed yam or about 3 cups
  • Raisins

 

Instructions

  1. Peel yam and cube. Boil in small amount of water until soft. Crush yam leaving the small amount of boiling water left after cooking. 

  2.Mix warm water with 2 tsp sugar. Sprinkle yeast over top and let ferment.

  3.To the yeast, add 1 1/2 cup sugar, nutmeg, cinnamon,  cubed butter, eggs,milk, salt, raisins and yams. Mix. 

  4.Gradually mix in flour and gently knead dough and keep adding more flour to make a soft elastic dough. Knead about10 minutes then place in a greased bowl and cover.

  5.Let raise until doubled in bulk

  6.Grease loaf pans. Punch down and knead dough about three minutes. Cut into loaf size portions. Shape into loaves and put in pans. Leave in warm place to rise.

  7.Bake at 350 for 35-40 mins.until nicely browned. Cool on wire rack.
