Braptafel Muffins with Marzipan

German baked apple muffins

Ingredients

 

  • 50g raisins
  • 2 small apples
  • 50g marzipan
  • 2 eggs
  • 1 pinch salt
  • 1 pack vanilla
  • 2 tsp lemon juice
  • 1 1/3 cup flour
  • 2/3 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 75ml oil
  • 3/4 cup (150g) sour cream

 

Instructions

  1. Cut apples into quarters and remove seeds. Cut into smaller pieces and sprinkle with lemon juice.
  2. Chop the marzipan.
  3. Mix the flour, baking soda, and  baking powder.
  4. Add hte sugar, cinnamon, salt, eggs, oil, sour cream and marzipan.
  5. Knead until smooth and fold in apple pieces.
  6. Fill muffin tins to 3/4 full.
  7. Bake at 390F for 25-30 mins or until golden brown.
