Easy Cheezy Corn Puff

Ingredients

  • 2 cups whole kernel corn (one large can)
  • 1 can cream style corn
  • 3 eggs slightly beaten
  • 1/2 cup butter melted
  • 1 cup milk
  • 2 cups flour
  • 2 cups cornmeal (polenta or medium coarse)
  • 2 tbsp sugar
  • 1.5 tbsp baking powder
  • 1.5 tsp salt
  • 1/4 tsp black pepper
  • 225ml sour cream
  • 1 cup shredded cheddar cheese

Method

  1. Grease dish
  2. Combine all ingredients except for sour cream and cheddar cheese
  3. Dollop sour cream ontop and fold in gently
  4. Sprinkle cheese on top
  5. Bake for 40 minutes at 375F until golden brown and knife comes out clean
  6. Serve warm
