Cheddar, Corn and Onion loaf

Cheddar, corn and onion loaf

Ingredients

Makes 2 loaves

  • 3 cups flour
  • 1 cup cornmeal
  • 6 tsp of baking powder
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 tsp pepper flakes
  • 1/4 garlic powder
  • 1/4 black powder
  • 1 tsp dry mustard powder
  • 1 cup butter
  • 2 eggs
  • 2 cups milk
  • 4 tbsp grated parmesan cheese
  • 1 cup grated cheddar
  • 1 cup corn kernels
  • 1/2 red pepper, diced
  • 1 onion, diced
  • 2 green onions, chopped
  • Paprika to sprinkle on top
  • Optional: Diced ham or bacon

 

Instructions

  1. Mix all dry ingredients.
  2. Cut in butter.
  3. Add egg, milk and mustard.
  4. Add remaining ingredients and stir.
  5. Put into well greased loaf pans and sprinkle paprika on top.
  6. Bake at 350F for 45-60 minutes until golden brown and cooked.
