Ingredients

  • Pork loin
  • Salt
  • Pepper
  • Green seasoning
  • Dried apricots
  • Dried cranberries
  • Raisins
  • Granny smith apple
  • Onions
  • Celery
  • Red pepper
  • Roasted garlic
  • Italian sausage meat

Instructions

  1. Stab knife through center of pork loin to make an opening.
  2. Season with salt, pepper and green seasoning.
  3. Soak dried apricots, raisins and cranberries in hot water until puffed up (couple of hours)
  4. Dice up the apricots, granny smith apple, onions, celery, red pepper and roasted garlic.
  5. Cut up and mix in Italian sausage meat. Adjust salt and pepper.
  6. Stuff pork loin.
  7. Bake at 300F until up to temperature and cooked.
