Stuffed Pork Loin


Ingredients
- Pork loin
- Salt
- Pepper
- Green seasoning
- Dried apricots
- Dried cranberries
- Raisins
- Granny smith apple
- Onions
- Celery
- Red pepper
- Roasted garlic
- Italian sausage meat
Instructions
- Stab knife through center of pork loin to make an opening.
- Season with salt, pepper and green seasoning.
- Soak dried apricots, raisins and cranberries in hot water until puffed up (couple of hours)
- Dice up the apricots, granny smith apple, onions, celery, red pepper and roasted garlic.
- Cut up and mix in Italian sausage meat. Adjust salt and pepper.
- Stuff pork loin.
- Bake at 300F until up to temperature and cooked.
