Stew Pork with Christophene and Carrots

Ingredients

  • Pork or chicken
  • Christophene
  • Carrots
  • Onions
  • Tomato
  • Thyme (or green seasoning)
  • Garlic
  • Black pepper
  • Salt
  • Sugar ( 2tsp - 2 tbsp)

 

Instructions

  1. Cut and season pork with diced onions, tomatoes, thyme, garlic, black pepper and salt.
  2. Peel and cut vegetables.
  3. Brown sugar in oil until dark golden and bubbly.
  4. Add meat and stir quickly to brown.
  5. Add a small amount of water, cover and cook until done (10-15mins).
  6. Remove lid and let meat liquid dry out.
  7. Remove meat and add vegetables to pot.
  8. Cook vegetables until done, mix with meat and adjust flavour if needed.
