Stewed Belly Pork with Japanese Eggplant
Ingredients
- 1 1/2 lbs belly pork
- 3 lbs Japanese eggplants
- Ginger
- Garlic
- Onion
- Cilantro
- Black pepper
- Pepper flakes
- Soy sauce (light and dark)
- Cooking wine
- Oyster sauce
- Sweet chili sauce
Method
- Cube belly pork
- Cook in pot with garlic, ginger, onion, soy sauce, cooking wine, black pepper, pepper flakes
- Add water and let cook down, dry down sauce
- Add oyster sauce, sweet chilli, cilantro and eggplant and let cook until eggplant cooked (not mushy). Salt if needed
