Stewed Belly Pork with Japanese Eggplant

 

Ingredients

  • 1 1/2 lbs belly pork
  • 3 lbs Japanese eggplants
  • Ginger
  • Garlic
  • Onion 
  • Cilantro
  • Black pepper
  • Pepper flakes
  • Soy sauce (light and dark)
  • Cooking wine 
  • Oyster sauce
  • Sweet chili sauce

 

Method

  1. Cube belly pork
  2. Cook in pot with garlic, ginger, onion, soy sauce, cooking wine, black pepper, pepper flakes
  3. Add water and let cook down, dry down sauce
  4. Add oyster sauce, sweet chilli, cilantro and eggplant and let cook until eggplant cooked (not mushy). Salt if needed
