Lemongrass grilled pork brochettes
2pounds pork loin
marinade same as for lemongrass grilled chicken
split pork loin chunk in half lengthwise
slice into 1/4 inch thick slices cross grain
prepare marinade and mix in pork slices. Let sit overnight or at least two hours. Soak a few skewers in warm water. Thread pork slices onto sticksin a zigzag fashion. Broil under high heat turning once tuntil nicely browned and just cooked. Be careful not to overlook as pork loin is very lean and will become hard and dry.
