Geera Pork Stew
Ingredients
- 2lbs cubed pork leg
- 4 tbsp chives chopped fine
- 1 tbsp garlic
- 1 tbsp vinegar
- 1 tbsp garam marsala
- 1 tsp cumin (geera)
- 1 tsp salt
- 2 tbsp oil
- 2 tbsp sugar
- 1 Onion chopped
- 3 pimentos chopped and seeded
- 1 scotch bonnet pepper
- Water
Method
- Season pork overnight with chives, garlic, vinegasr, garam marsala, geera and salt.
- Heat oil in heavy pot, add sugar and brown.
- Add pork, reserving marinade, and stir until brown.
- Add onions and pimentos, stir for a few minutes, then add marinade and pepper.
- Cover and cook slowly until pork is tender, adding hot water when necessary to form thick gravy.
- Remove pepper before it is too cooked.
- Serve with rice or roti
