Geera Pork Stew

Ingredients

  • 2lbs cubed pork leg
  • 4 tbsp chives chopped fine
  • 1 tbsp garlic
  • 1 tbsp vinegar
  • 1 tbsp garam marsala
  • 1 tsp cumin (geera)
  • 1 tsp salt
  • 2 tbsp oil
  • 2 tbsp sugar
  • 1 Onion chopped
  • 3 pimentos chopped and seeded
  • 1 scotch bonnet pepper
  • Water

Method

  1. Season pork overnight with chives, garlic, vinegasr, garam marsala, geera and salt.
  2. Heat oil in heavy pot, add sugar and brown.
  3. Add pork, reserving marinade, and stir until brown.
  4. Add onions and pimentos, stir for a few minutes, then add marinade and pepper.
  5. Cover and cook slowly until pork is tender, adding hot water when necessary to form thick gravy.
  6. Remove pepper before it is too cooked.
  7. Serve with rice or roti
