Meat Balls in fragrant coconut broth

1 pound minced beef

1 pound ground pork

1 small onion diced finely

4 sprigs cilantro

2 cloves garlic

1/2 red pepper diced finely

1 teaspoon thyme leaves

1 teaspoon chill flakes 1/2 cup bread crumbs

4 tablespoons milk

salt

black pepper 

soak bread crumbs in milk fry garlic, onions, peppers in olive oil until translucent and lightly browned. Add thyme and cIlantro and cool. Put meats and all other ingredients in large bowl. Add cooked onion mixture. Lightly mix to combine and roll into large meatballs. Do not over work the meat or meatballs will be tough. Brown meat balls in pan rolling to brown on all sides. Add sauce ingredients and simmer 10- 15 minutes. Remove lemongrass stalks and cardamom pods. if too much gravy, remove meatballs from pot and reduce till sauce starts to lightly thicken. Add lime juice and zest. Garnish with fresh cilantro.

Sauce ingredients

2 stalks lemongrass split and pounded

1 inch piece of ginger sliced thinly and julienned

1/2 teaspoon cinnamon

1/2 teaspoon tumeric

4 pods cardamon cracked

1 teaspoon coriander 

chili flakes

 1 can coconut milk

1/2 can chicken stock 

Zest and juice of 1 small lime

cilantro to garnish.
