Ponderosa Cake

Nic's favorite banana coffee cake!

Ponderosa cake

Ingredients

  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1 egg
  • 1.5 mL vanilla
  • 1 medium ripe banana
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 6 tbsp sour cream
  • 1/4 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup chocolate chips

 

Instructions

  1. Grease pan and lightly dust with flour. Preheat oven to 350F
  2. Cream together butter and sugar in a large mixing bowl.
  3. Add egg and beat on medium until smooth.
  4. Peel and mash bananas in  another bowl.
  5. Add vanilla and bananas. Mix until smooth
  6. Add flour, baking powder and baking soda into a medium mixing bowl.
  7. Add to the creamed mixture dry ingredients alternately with sour cream, ending with dry ingredients. Do not over mix.
  8. Pour half the batter into a small loaf pan (25x5)
  9. Combine brown sugar and cinnamon in a small bowl.
  10. Sprinkle half of the mixture along with half of the chocolate chips onto the batter.
  11. Repeat the layers.
  12. Bake for 30mins at 350F or until an inserted tooth pick comes out clean.
  13. Cool in pan for 10mins and then cool completely on a wire rack.
