Ponderosa Cake
Nic's favorite banana coffee cake!
Ingredients
- 1/3 cup butter or margarine
- 1/2 cup sugar
- 1 egg
- 1.5 mL vanilla
- 1 medium ripe banana
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 6 tbsp sour cream
- 1/4 tsp cinnamon
- 1/4 cup brown sugar
- 1/2 cup chocolate chips
Instructions
- Grease pan and lightly dust with flour. Preheat oven to 350F
- Cream together butter and sugar in a large mixing bowl.
- Add egg and beat on medium until smooth.
- Peel and mash bananas in another bowl.
- Add vanilla and bananas. Mix until smooth
- Add flour, baking powder and baking soda into a medium mixing bowl.
- Add to the creamed mixture dry ingredients alternately with sour cream, ending with dry ingredients. Do not over mix.
- Pour half the batter into a small loaf pan (25x5)
- Combine brown sugar and cinnamon in a small bowl.
- Sprinkle half of the mixture along with half of the chocolate chips onto the batter.
- Repeat the layers.
- Bake for 30mins at 350F or until an inserted tooth pick comes out clean.
- Cool in pan for 10mins and then cool completely on a wire rack.
