Orange Cake
Makes one bundt cake or 2 loaves.
Can halve recipe for one loaf
Ingredients
- 2 1/2 cups Flour, sifted
- 2 1/2 tsps Baking Powder
- 4 Large Eggs
- 1 1/2 cups Granulated Sugar
- 1 cup Canola or Vegetable Oil
- 1 1/4 cup Orange Juice from 3-4 Oranges
- Orange zest from Oranges used
- 1 tsp Vanilla
Method
- Grease and flour pan(s)
- Preheat oven to 350F/180C
- Whisk eggs and sugar until pale and fluffy, approx 5 mins
- Slowly whisk in oil until combined
- Add orange juice, zest, and vanilla. Whisk slowly until combined
- Add flour and baking powder, whisk until just combined, don't over mix - batter is quite runny
- Pour into pans
- Bake 50-60mins for bundt or 40-50mins for loavesĀ
- Cool on a wire rack
- Cake tastes better the next day!
