Orange Cake

Orange Cake

Makes one bundt cake or 2 loaves.
Can halve recipe for one loaf

Ingredients

  • 2 1/2 cups Flour, sifted
  • 2 1/2 tsps Baking Powder
  • 4 Large Eggs
  • 1 1/2 cups Granulated Sugar
  • 1 cup Canola or Vegetable Oil
  • 1 1/4 cup Orange Juice from 3-4 Oranges
  • Orange zest from Oranges used
  • 1 tsp Vanilla

Method

  1. Grease and flour pan(s)
  2. Preheat oven to 350F/180C
  3. Whisk eggs and sugar until pale and fluffy, approx 5 mins
  4. Slowly whisk in oil until combined
  5. Add orange juice, zest, and vanilla. Whisk slowly until combined
  6. Add flour and baking powder, whisk until just combined, don't over mix - batter is quite runny
  7. Pour into pans
  8. Bake 50-60mins for bundt or 40-50mins for loavesĀ 
  9. Cool on a wire rack
  10. Cake tastes better the next day!
