Ginger Cake
Ingredients
Cake
- 1 cup buttermilk
- 2 eggs
- 1 egg white
- 1 1/2 tsp vanilla essence
- 2 3/4 cup flour
- 1 2/3 cup sugar
- 2 1/2 tsp baking powder
- 2 1/2 ginger powder
- 1 1/4 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ground clove
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 3/4 cup butter
- 1/2 cup crystalized ginger chopped
Topping
- 2/3 cup brown sugar
- 1/4 cup butter
- 1/4 cup whipping cream
- 1 tbsp brandy or rum
Instructions
- Whisk 3/4 cup buttermilk, eggs, egg white and vanilla.
- Mix all dry ingredients in a separate bowl.
- Cream butter and sugar.
- Add egg mixture and flour alternatively, plus extra buttermilk.
- Bake at 350F for 1 hour or until an inserted toothpick comes out clean.
- Cool and serve with topping.
