Ginger Cake

Ingredients

 

Cake

  • 1 cup buttermilk
  • 2 eggs
  • 1 egg white
  • 1 1/2 tsp vanilla essence
  • 2 3/4 cup flour
  • 1 2/3 cup sugar
  • 2 1/2 tsp baking powder
  • 2 1/2 ginger powder
  • 1 1/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp ground clove
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup butter
  • 1/2 cup crystalized ginger chopped

 

Topping

  • 2/3 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup whipping cream
  • 1 tbsp brandy or rum

 

Instructions

  1. Whisk 3/4 cup buttermilk, eggs, egg white and vanilla.
  2. Mix all dry ingredients in a separate bowl.
  3. Cream butter and sugar.
  4. Add egg mixture and flour alternatively, plus extra buttermilk.
  5. Bake at 350F for 1 hour or until an inserted toothpick comes out clean.
  6. Cool and serve with topping.
