Dundee Cake

Ingredients

  • 6oz cherries
  • 6oz mix peel
  • 6oz chopped almonds
  • 1lb currants
  • 1lb sultanas
  • 1lb raisins
  • 8eggs
  • 1lb margarine
  • 1lb sugar
  • 1 ¼ lb flour
  • 1tsp spice powder
  • 6tbsp milk

 

Instructions

  1. Dust the fruits in flour measured for the cake to prevent them from sinking.
  2. Beat margarine and sugar.
  3. Add eggs one at a time.
  4. Lightly stir in the flour alternately with the milk.
  5. Stir in the fruit.
  6. Make in moderate oven for 1 ½ hours.
  7. Cake improves when stored in an air tight tin.
