Dundee Cake
Ingredients
- 6oz cherries
- 6oz mix peel
- 6oz chopped almonds
- 1lb currants
- 1lb sultanas
- 1lb raisins
- 8eggs
- 1lb margarine
- 1lb sugar
- 1 ¼ lb flour
- 1tsp spice powder
- 6tbsp milk
Instructions
- Dust the fruits in flour measured for the cake to prevent them from sinking.
- Beat margarine and sugar.
- Add eggs one at a time.
- Lightly stir in the flour alternately with the milk.
- Stir in the fruit.
- Make in moderate oven for 1 ½ hours.
- Cake improves when stored in an air tight tin.
