Lemon Pound Cake

Lemon pound cake

Ingredients

  • 1/2 cup room temp butter
  • 3/4 cup sugar
  • 2 room temp eggs
  • 2tbsp lemon juice
  • 1tsp lemon rind
  • 1/4 tsp salt
  • 1 1/2 cup flour
  • 1tsp baking powder
  • 1/2 cup warm milk
Syrup 
  • 1/4 cup lemon
  • 1/4 cup water
  • 1/2 cup sugar (or to taste sweet)

Method

  1. Beat butter. Add sugar and beat until fluffy
  2. Add eggs and beat in
  3. Add lemon juice and rind
  4. Combine flour, salt, baking powder
  5. Add alternatively dry and milk, ending with dry
  6. Bake at 325F in a oiled and parchment papered (loaf pan) or oiled and floured (bunt pan)
  7. GLAZE: combine lemon juice, water and sugar in a small pot. Boil down until syup 
  8. Remove cake from oven when golden brown and fully cooked
  9. Before removing from pan, poke holes in cake with tooth pick. Pour syrup on and let it sit until absorbed
  10. Remove from pan and allow to cool on rack. Eat warm or cooled
