Lemon Pound Cake
Ingredients
- 1/2 cup room temp butter
- 3/4 cup sugar
- 2 room temp eggs
- 2tbsp lemon juice
- 1tsp lemon rind
- 1/4 tsp salt
- 1 1/2 cup flour
- 1tsp baking powder
- 1/2 cup warm milk
Syrup
- 1/4 cup lemon
- 1/4 cup water
- 1/2 cup sugar (or to taste sweet)
Method
- Beat butter. Add sugar and beat until fluffy
- Add eggs and beat in
- Add lemon juice and rind
- Combine flour, salt, baking powder
- Add alternatively dry and milk, ending with dry
- Bake at 325F in a oiled and parchment papered (loaf pan) or oiled and floured (bunt pan)
- GLAZE: combine lemon juice, water and sugar in a small pot. Boil down until syup
- Remove cake from oven when golden brown and fully cooked
- Before removing from pan, poke holes in cake with tooth pick. Pour syrup on and let it sit until absorbed
- Remove from pan and allow to cool on rack. Eat warm or cooled
