Chocolate mousse
2 Eggs
1/2 cup sugar
2 1/2 cups whipping cream
1 cup semi sweet chocolate chips or 6 ozs.good quality chocolate
beat eggs and sugar for 3 minutes. Heat 1cup whipping cream till steaming. Do not boil rapidly. Add to egg mixture snd keep stirring until blended. Return to pot and cook on medium heat until just thickened. Add chocolate and stif until melted and smooth. Pour into bowl, cover and chill in fridge for two hours. Whip 1 1/2 cups cream until stiff peaks form. using spatula, stir in cooled chocolate mixture and stir until evenly blended. Do not beat vigorously. Spoon immediately into dessert cups , chill at least 4 hours or overnight before serving. Top with fresh fruit or fruit compote.
