No Bake Cheesecake
Ingredients
Crust
- 1 cup graham cracker crumbs
- 2 tbsp melted butter
- 1/2 tsp lemon extract
Filling
Note: requires double this list for the two layered cake*
- 1 pkg (85g) pineapple JELLO (or lemon), approx 1/3 cup
- 1 cup boiling water
- 1 pkg (250g) cream cheese
- 1/4 cup white sugar
- 1 cup unwhipped cream (makes 2 cups whipped)
- 1 can (398ml) crushed pineapple
- 10 marishino cherries (optional)
* For second layer substitute strawberry JELLO for the pineapple and 1/2 cup chopped strawberries instead of crushed pineapple. Omit cherries.
Instructions
- Mix graham wafer crumbs with melted butter and lemon extract.
- Spread crumbs into bottom of a spring form pan or pie dish.
- Bake base until golden brown and let cool.
- If using a spring form pan, grease sides and line with wax paper or parchment paper.
- Dissolve JELLO in boiling water and set aside.
- Beat whipping cream until stiff peaks, put in fridge.
- Beat cream cheese and sugar until fluffy and set aside.
- Drain excess liquid from pineapple.
- Combine creamed cheese and cooled JELLO (cool but not set). Mix thoroughly. Mix in whipped cream
- Add pineapple and optional cherries.
- Pour mixture over crumbs.
- Place in refridgerator and let sit for 1 hour.
- Mix ingredients for second layer with strawberries and place over first layer. Omit the cherries for the strawberry layer.
- Decorate with fruit and serve.
Note: Can make strawberry layer first if desired.
