No Bake Cheesecake

 

No Bake Cheesecake (side)

 

Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1/2 tsp lemon extract

 

Filling

Note: requires double this list for the two layered cake*

  • 1 pkg (85g) pineapple JELLO (or lemon), approx 1/3 cup
  • 1 cup boiling water
  • 1 pkg (250g) cream cheese
  • 1/4 cup white sugar
  • 1 cup unwhipped cream (makes 2 cups whipped)
  • 1 can (398ml) crushed pineapple
  • 10 marishino cherries (optional)

* For second layer substitute strawberry JELLO for the pineapple and 1/2 cup chopped strawberries instead of crushed pineapple. Omit cherries.

Instructions

  1. Mix graham wafer crumbs with melted butter and lemon extract.
  2. Spread crumbs into bottom of a spring form pan or pie dish.
  3. Bake base until golden brown and let cool.
  4. If using a spring form pan, grease sides and line with wax paper or parchment paper.
  5. Dissolve JELLO in boiling water and set aside.
  6. Beat whipping cream until stiff peaks, put in fridge.
  7. Beat cream cheese and sugar until fluffy and set aside.
  8. Drain excess liquid from pineapple.
  9. Combine creamed cheese and cooled JELLO (cool but not set). Mix thoroughly. Mix in whipped cream
  10. Add pineapple and optional cherries.
  11. Pour mixture over crumbs.
  12. Place in refridgerator and let sit for 1 hour.
  13. Mix ingredients for second layer with strawberries and place over first layer. Omit the cherries for the strawberry layer.
  14. Decorate with fruit and serve.

 

Note: Can make strawberry layer first if desired.
