Coconut Cake

Auntie Diane's special

Ingredients

  • 2cups flour
  • 1tsp baking powder
  • ¼ cup unsalted butter
  • 1 cup canned unsweetened coconut milk
  • 4eggs
  • 2 cups sugar
  • 1tsp vanilla
  • ¾ cup medium unsweetened coconut


Instructions

  1. Sift flour and baking powder.
  2. Heat butter and coconut milk until butter melts and milk is hot.
  3. Beat eggs and sugar until thick and pale (2minutes).
  4. Add vanilla. Turn to low, add flour and coconut and beat until just incorporated.
  5. Pour in hot milk and beat at low speed until just smooth.
  6. Bake in a 9” pan at 350F for 50-60 minutes.
