Coconut Cake
Auntie Diane's special
Ingredients
- 2cups flour
- 1tsp baking powder
- ¼ cup unsalted butter
- 1 cup canned unsweetened coconut milk
- 4eggs
- 2 cups sugar
- 1tsp vanilla
- ¾ cup medium unsweetened coconut
Instructions
- Sift flour and baking powder.
- Heat butter and coconut milk until butter melts and milk is hot.
- Beat eggs and sugar until thick and pale (2minutes).
- Add vanilla. Turn to low, add flour and coconut and beat until just incorporated.
- Pour in hot milk and beat at low speed until just smooth.
- Bake in a 9” pan at 350F for 50-60 minutes.
