Pinneaple Ice Box Cake
Ingredients
Cake
- 8 Eggs
- 1 ½ cups sugar
- 2 cups flour
- 1tsp baking powder
- 8 tsp water
- Lime peel
- Almond essence
- Bitters
Frosting
- 1 cup sugar
- ¼ lb butter
- 1 tin cream chilled
- 1 small can crushed pineapple
Instructions
- On high speed, beat eggs and sugar until light.
- Add lime peel, bitters and essence.
- Sift flour and baking powder.
- Lower speed and fold in flour.
- Do not beat. Add water at end.
- Bake in greased, floured layer pans at 400 degrees for approx 30mins.
- For frosting, cream butter and sugar until light.
- Whip in cream.
- Drain and add pineapple.
- Layer cake, frosting, cake and cover all with frosting.
- Refrigerate.
