Pinneaple Ice Box Cake

Ingredients

Cake

  • 8 Eggs
  • 1 ½ cups sugar
  • 2 cups flour
  • 1tsp baking powder
  • 8 tsp water
  • Lime peel
  • Almond essence
  • Bitters

 

Frosting

  • 1 cup sugar
  • ¼ lb butter
  • 1 tin cream chilled
  • 1 small can crushed pineapple


 Instructions

  1. On high speed, beat eggs and sugar until light.
  2. Add lime peel, bitters and essence.
  3. Sift flour and baking powder.
  4. Lower speed and fold in flour.
  5. Do not beat. Add water at end.
  6. Bake in greased, floured layer pans at 400 degrees for approx 30mins.
  7.  For frosting, cream butter and sugar until light.
  8. Whip in cream.
  9. Drain and add pineapple.
  10. Layer cake, frosting, cake and cover all with frosting.
  11. Refrigerate.
