Curried Chicken
Ingredients
- 1 chicken
- 1 tsp minced garlic
- 2 tbsp minced green seasoning
- Salt
- Hot pepper
- vegetable oil
- 3-4 tbsp curry powder
- Tomatoes chopped
- Chopped onion
- Hot water
Instructions
- Cut chicken in small pieces and season with garlic, green seasoning, salt and hot pepper
- Marinate for 30 minutes or more
- heat oil. Mix curry powder with 1/4 cup water and add to oil. Cook 2-3 minutes.
- Add chicken and stir to coat in curry. Stir well and dry out liquid (about 10 mins)
- Add tomatoes and onions and cook for 1 min.
- Stir in 1/2 cup hot water.
- Lower heat to medium, cover and cook until meat is tender. Add more water if more sauce is needed.
- Adjust salt and hot pepper.
Serve with curried vegetables, stewed melongene, stewed pumpkin, choka, potato roti and buss-up shot.
