Gumbo
Ingredients:
- 1/2 lb chorizo sausage, sliced or removed from casing and fried
- 1/4 lb bacon chunked
- 1 lb chicken cubed
- 1lb shrimp, fish or other seafood
- 2 cups okra
- 1 can diced tomatoes
- 1 onion diced
- 3 stalks green onion chopped
- 1/2 red or green pepper diced
- 2 stalks celery chopped
- 1 tbsp minced garlic
- 4 stems parsley
- 2 sprigs thyme
- 2 bay leaves
- 1/4 tsp cayenne pepper
- 1 tsp marjoram
- 1/4 tsp pepper flakes (optional)
- black pepper
- salt (if needed at end)
- 2/3 cup brown rice
- 2 cans chicken stock
- 6 cups water Roux
- 1/3 cup butter
- 1/3 cup flour
Method:
- Heat oil and brown bacon, remove then brown sausage, remove, then brown chicken.
- Cook vegetables
- Make roux by melting butter and whisking in flour. Keep stirring on medium to low heat until mixture turns dark brown (milk chocolate colour). May take a while (10-15mins). DO NOT BURN!!!
- Add chicken stock and extra water to pot.
- Add seasonings
- Put back in bacon, chicken and sausage
- Let it all boil up then turn down to low to simmer (or add all to slow cooker)
- After a few hours, add rice and chopped okra
- 30-45 minutes before serving, add shrimp and other seasonings
- Delish!
