Thai Cashew Nut Chicken

Ingredients

  • Chicken thighs or breast
  • Fresh cashew nuts
  • Mushrooms
  • Baby corn
  • Onions
  • Dried chili peppers
  • Green onions
  • Oyster sauce
  • Fish sauce
  • Sugar
  • Garlic

 

Instructions

  1. Wash, clean, de-bone and cut chicken.
  2. Cut mushroom, onions and baby corn into bite size pieces.
  3. In a pan, fry cashew nuts and dried chili peppers until cashews are browned. Remove from heat.
  4. Cook mushrooms, drain and set aside.
  5. Add garlic and chicken to a pot and cook for 1 minute.
  6. Add the onions and babycorn. Cook until chicken is done.
  7. Add the mushrooms.
  8. Add fish sauce, oyster sauce and sugar.
  9. Turn up the heat and cook for 1 minute.
  10. Add the cashew nuts, dried chili peppers and green onions.
  11. Place fresh basil on top and serve with rice.
