Stew Chicken with Christophene and Carrots

Stew chicken with christophene and carrots

Ingredients

  • Chicken leg and thighs or breast, chopped  or pork
  • Christophene
  • Carrots
  • Onions
  • Tomato
  • Thyme (or green seasoning)
  • Garlic
  • Black pepper
  • Salt
  • Sugar ( 2tsp - 2 tbsp)

 

Instructions

  1. Cut and season chicken with diced onions, tomatoes, thyme, garlic, black pepper and salt.
  2. Peel and cut vegetables.
  3. Brown sugar in oil until dark golden and bubbly.
  4. Add meat and stir quickly to brown.
  5. Add a small amount of water, cover and cook until done (10-15mins).
  6. Remove lid and let meat liquid dry out.
  7. Remove meat and add vegetables to pot.
  8. Cook vegetables until done, mix with meat and adjust flavour if needed.
