Hummus

Hummus 2

Ingredients

 

  • 3 cups canned chick peas, drained, rinsed and drained again
  • 1/4 cup sesame paste (tahini)
  • 2 tsbp water
  • 1/4 cup strained freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves, peeled and chopped.
  • 1/4 tsp salt
  • freshly ground black pepper to taste
  • 1/2 cup chopped parsley

 

Instructions

  1. In a food processor or blender, combine the chick peas, sesame paste, water, lemon juice, olive oil and garlic.
  2. Process or blend until smooth and creamy in texture.
  3. Scrape down the sides of the bowl if necessary.
  4. Add salt and pepper and process for a few seconds.
  5. Add mnore salt, pepper or lemon juice to taste.
  6. If too thick add small amounts of lemon juice and olive oil.
  7. Stir in the parsley.
  8. Refridgerate until ready to serve.
  9. Serve with Pita Chips
