Hummus
Ingredients
- 3 cups canned chick peas, drained, rinsed and drained again
- 1/4 cup sesame paste (tahini)
- 2 tsbp water
- 1/4 cup strained freshly squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 2 garlic cloves, peeled and chopped.
- 1/4 tsp salt
- freshly ground black pepper to taste
- 1/2 cup chopped parsley
Instructions
- In a food processor or blender, combine the chick peas, sesame paste, water, lemon juice, olive oil and garlic.
- Process or blend until smooth and creamy in texture.
- Scrape down the sides of the bowl if necessary.
- Add salt and pepper and process for a few seconds.
- Add mnore salt, pepper or lemon juice to taste.
- If too thick add small amounts of lemon juice and olive oil.
- Stir in the parsley.
- Refridgerate until ready to serve.
- Serve with Pita Chips
