Shrimp Salad Rolls

Shrimp Salad Rolls

Ingredients

  • Cooked prawns
  • Round 5" rice paper wrappers
  • Carrots, shredded
  • Cucumber, shredded
  • Shredded, thin leafy part of nappa
  • Cilantro
  • Rice noodles, boiled and drained
  • Rice vinegar
  • Salt
  • Pepper
  • Sweet Chili Sauce
  • Chopped Ginger
  • Chopped Garlic
  • Peanut dipping sauce

Instructions

  1. Cut prawns in half, season lightly with salt, pepper, sweet chili sauce, and a little chopped ginger and chopped garlic.
  2. Season shredded nappa/cabbage/lettuce with rice vinegar, sugar, sesame oil, salt and pepper.
  3. Soak rice paper rounds in warm water until just soft.
  4. Lay two halves of shrimp, cilantro leaf, carrots, cucumber, seasoned nappa, and noodles in wrapper.
  5. (optional) Drizzle a slight amount of peanut sauce on noodles.
  6. Fold bottom, sides then roll wrapper tightly.
  7. Serve with peanut dipping sauce.
