Accra

Makes ~ one dozen

Ingredients

  • 1/2 lb Salt Fish
  • 1 cup Flour
  • 2 tsp Baking Powder
  • 1 tsp Yeast
  • 1/4 cup finely diced Onion
  • 2 Cloves Garlic
  • 2 shado beni leaves (or 1 tbsp cilantro)
  • 1/2 tsp Parsley (optional)
  • 2tbsp Scallions
  • 1/4 tsp chopped Thyme
  • 1tsp minced Hot Pepper or Pepper Flakes
  • 1 Egg
  • Black Pepper
  • 1/4-1/2 cup Water
  • Pinch of Sugar
  • Vegetable oil for frying

Method

  1. Soak saltfish overnight to remove excess salt, remove bones and shred
  2. Activate yeast
  3. Chop up all the seasonings
  4. Mix flour, baking powder, sugar and all the seasonings in a bowl
  5. Stir in the salt fish then the egg
  6. Add in water slowly until a thick batter is achieved 
  7. Heat oil 
  8. Add in heaping teaspoons of batter to the oil
  9. Fry for 3-4 minutes until golden brown on each side
  10. Eat with Tamarind Dip
