Makes ~ one dozen
Ingredients
- 1/2 lb Salt Fish
- 1 cup Flour
- 2 tsp Baking Powder
- 1 tsp Yeast
- 1/4 cup finely diced Onion
- 2 Cloves Garlic
- 2 shado beni leaves (or 1 tbsp cilantro)
- 1/2 tsp Parsley (optional)
- 2tbsp Scallions
- 1/4 tsp chopped Thyme
- 1tsp minced Hot Pepper or Pepper Flakes
- 1 Egg
- Black Pepper
- 1/4-1/2 cup Water
- Pinch of Sugar
- Vegetable oil for frying
Method
- Soak saltfish overnight to remove excess salt, remove bones and shred
- Activate yeast
- Chop up all the seasonings
- Mix flour, baking powder, sugar and all the seasonings in a bowl
- Stir in the salt fish then the egg
- Add in water slowly until a thick batter is achieved
- Heat oil
- Add in heaping teaspoons of batter to the oil
- Fry for 3-4 minutes until golden brown on each side
- Eat with Tamarind Dip
