Zucchini and Funcy with Ham (Jai)

Zucchini and Funcy with Ham

Ingredients

  • 2 zucchinis
  • 2 small bundles dried funcy
  • 2 sprigs green onion
  • 1/2 cup ham diced or one Laap coeng (chinese sausage)
  • sesame oil

 

Instructions

  1. Fry ham or lap chung and add garlic to brown.
  2. Add sliced zucchini and let cook.
  3. Soak and wash funcy for 5 mins.
  4. Drain funcy and cut. Add to pot when zucchini almost cooked. If pot too dry add a little water.
  5. Cook for 2 mins.
  6. Add green onions and a few drops of sesame oil, salt and pepper.
  7. Enjoy!

Alternate Instructions

Peel and cut up zucchini. Brown your bit of garlic and a slice or two of ginger. Cook zucchini and add sliced ham or lapchung to cook with it. When almost cooked add soaked and drained funcy. Funchi cooks quick.it will suck up liquid from zucchini. Add a bit od salt, pepper and a drop of sesame oil and chopped green onion.
