Stuffed Melongene with Meat
Ingredients
- 1 cup cooked minced meat
- 1 large melongene
- 1-2 tomatoes
- 3 tbsp butter
- 2/3 cup bread crumbs (soft)
- 1 tsp salt
- 1/2 tsp pepper
- 2-3 tbsp bread crumbs (dry)
- onions and chives
Method
- Wash melongene and cut off a slice from the top
- Scoop out pulp, leaving a thin shell. Cut in half if desired
- Dice the pulp and cook in butter in a covered pan on low heat until soft
- Add onion and chive to pulp while it is cooking
- Add all other ingredients except dry bread crumbs. Fill melongene shell with the meat mixture.
- Sprinkle top with dry breadcrumbs, add bits of butter
- Brown quickly in hot oven
