Stuffed Melongene with Meat

Ingredients

  • 1 cup cooked minced meat
  • 1 large melongene
  • 1-2 tomatoes
  • 3 tbsp butter
  • 2/3 cup bread crumbs (soft)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2-3 tbsp bread crumbs (dry)
  • onions and chives

 

Method

  1. Wash melongene and cut off a slice from the top
  2. Scoop out pulp, leaving a thin shell. Cut in half if desired
  3. Dice the pulp and cook in butter in a covered pan on low heat until soft
  4. Add onion and chive to pulp while it is cooking
  5. Add all other ingredients except dry bread crumbs. Fill melongene shell with the meat mixture.
  6. Sprinkle top with dry breadcrumbs, add bits of butter
  7. Brown quickly in hot oven
