Cauliflower Souffle
Ingredients
- Cauliflower
- Cheddar cheese
- Eggs
- Milk
- White pepper
- Salt
- Flour
- Butter
Instructions
- Wash, cut and blanch cauliflower. Drain well.
- In a pot, melt butter and stir in flour.
- Add milk stirring vigorously and heat on medium until thickened.
- Seperate egg yolks from whites. Stir egg yolk into white sauce.
- Add white pepper, salt and grated cheddar cheese.
- Mix cauliflower in the white sauce and place in a baking dish.
- Beat egg whites until stiff peaks are formed.
- Add egg whites on top of cauliflower and gently stir so that it is slightly mixed with white sauce but still fluffy.
- Bake at 350F until browned.
