Cauliflower Souffle

Cauliflower Souffle 2

Ingredients

  • Cauliflower
  • Cheddar cheese
  • Eggs
  • Milk
  • White pepper
  • Salt
  • Flour
  • Butter

 

Instructions

  1. Wash, cut and blanch cauliflower. Drain well.
  2. In a pot, melt butter and stir in flour.
  3. Add milk stirring vigorously and heat on medium until thickened.
  4. Seperate egg yolks from whites. Stir egg yolk into white sauce.
  5. Add white pepper, salt and grated cheddar cheese.
  6. Mix cauliflower in the white sauce and place in a baking dish.
  7. Beat egg whites until stiff peaks are formed.
  8. Add egg whites on top of cauliflower and gently stir so that it is slightly mixed with white sauce but still fluffy.
  9. Bake at 350F until browned.
