Calaloo

Ingredients

  • 2 bunches Spinach trimmed and well washed
  • 1 can coconut milk
  • 18 ochroes
  • 1 tsp minced garlic
  • 1 small onion chopped fine
  • 1 tbsp green seasoning
  • Pigtails or ham bone with a little water or
  • 1 cup chicken stock

 

Method

  1. Wash and drain spinach well and put in pot
  2. chop seasonings and ochroes and lay ontop of spinach
  3. add coconut milk, pigtais, or ham bone or chicken stock salt and pepper. Add extra water if more liquid needed and bring to boil
  4. simmer until everything is soft (1-1.5hours)
  5. Swizzle or lightly blend and add a touch of butter or some drippings from stewed meats
