Vegetarian Meatloaf

Vegetarian Meatloaf

Ingredients

  • 2 pouches ground soy beef
  • Half can cooked canned lentils
  • 3 tbsp quick oats
  • 1/4 cup bread crumbs
  • 1 egg
  • 1/2 1 small leaf celery chopped
  • onion chopped
  • 1/2 small red pepper chopped
  • 2 leaves parsley
  • 1/2 tsp thyme and/or italian spice
  • 2 green onions chopped
  • 1 tbsp wortortortor
  • 3 tbsp ketchup
  • 2 tsp konor's onion soup mix
  • Black pepper
  • Salt (if needed)

 

For Basting:

  • 1/4 cup barbecue sauce
  • 1 tbsp brown sugar

Method

  1. Break up soy ground beef
  2. Add all chopped veggies and herbs (discard hard stems of parsley)
  3. Add egg, breadcrumbs, oats, onion soup mix, ketchup and wortortortor
  4. Drain and wash cooked canned lentils and add
  5. Stir well and press into a plastic wrap lined loaf pan. invert onto baking rack.
  6. Put small amount of water on base of tray
  7. bake for 30-40 minutes at 350F
  8. Baste with barbecue sauce and sugar mixture
  9. Bake again for 5 minutes to dry off sauce
