Vegetarian Meatloaf
Ingredients
- 2 pouches ground soy beef
- Half can cooked canned lentils
- 3 tbsp quick oats
- 1/4 cup bread crumbs
- 1 egg
- 1/2 1 small leaf celery chopped
- onion chopped
- 1/2 small red pepper chopped
- 2 leaves parsley
- 1/2 tsp thyme and/or italian spice
- 2 green onions chopped
- 1 tbsp wortortortor
- 3 tbsp ketchup
- 2 tsp konor's onion soup mix
- Black pepper
- Salt (if needed)
For Basting:
- 1/4 cup barbecue sauce
- 1 tbsp brown sugar
Method
- Break up soy ground beef
- Add all chopped veggies and herbs (discard hard stems of parsley)
- Add egg, breadcrumbs, oats, onion soup mix, ketchup and wortortortor
- Drain and wash cooked canned lentils and add
- Stir well and press into a plastic wrap lined loaf pan. invert onto baking rack.
- Put small amount of water on base of tray
- bake for 30-40 minutes at 350F
- Baste with barbecue sauce and sugar mixture
- Bake again for 5 minutes to dry off sauce
