Cooked Beans

Baby Lima Beans

Ingredients

  • Dried beans (Red beans, kidney beans, lima beans, lentils...)
  • Chicken stock, beef stock, ham drippings, ham bone or pig tail.
  • Onions
  • Celery
  • Tomatoes
  • Parsley
  • Garlic
  • Seasoning
  • Squash
  • Black pepper
  • Salt
  • Sugar

 

Instructions

  1. Wash and soak beans overnight in water with a tablespoon of vinegar.
  2. Dice and fry up the onions, celery, tomatoes and parsley. Add salt, black pepper, garlic and seasonings.
  3. In a slow cooker or pot, add beans and enough water to just cover the beans.
  4. Add stock or alternative meat.
  5. Add fried vegetables, squash and sugar. Cook on low for several hours until beans are ready.
