Kale and Italian Sausage Soup

Ingredients

  • Italian Sausage
  • Onion
  • Garlic
  • Celery
  • Capsicum
  • Chicken stock
  • Potatoes - sliced with skin on
  • Kale
  • Black pepper
  • Red Pepper flakes
  • Dried Oregano
  • Salt if required
  • Optional: cream

Method

  1. Take off sausage casing and cook in pot. Cook until browned and cut up while cooking
  2. Drain extra fat from sausages
  3. Add onion, garlic, celery and capsicum, cook a few minutes
  4. Add chicken stock, cook until sausage softened
  5. Add slices of potatoes, cook for a few minutes
  6. Add coarsely chopped kale and cook quickly
  7. Optional: Add cream for a creamy soup
