Kale and Italian Sausage Soup
Ingredients
- Italian Sausage
- Onion
- Garlic
- Celery
- Capsicum
- Chicken stock
- Potatoes - sliced with skin on
- Kale
- Black pepper
- Red Pepper flakes
- Dried Oregano
- Salt if required
- Optional: cream
Method
- Take off sausage casing and cook in pot. Cook until browned and cut up while cooking
- Drain extra fat from sausages
- Add onion, garlic, celery and capsicum, cook a few minutes
- Add chicken stock, cook until sausage softened
- Add slices of potatoes, cook for a few minutes
- Add coarsely chopped kale and cook quickly
- Optional: Add cream for a creamy soup
