Cream of Cauliflower and Cheddar Soup

Ingredients

  • 2 tbsp Butter
  • 1/2 cup onions finely chopped
  • 2 cups chicken broth
  • 3 1/2 cups cauliflower
  • 2 cups water
  • 2 cups milk
  • 2-3 tbsp flour
  • 1 potato cubed small
  • 1 1/2 cups cheddar cheese
  • 1/4 tsp ground pepper
  • Salt to taste

Method

  1. Cook onions in melted butter until tender.
  2. Add chicken broth, water, cauliflower and ground pepper.
  3. Bring to a boil and let simmer for approx 15 minutes, until cauliflower is tender.
  4. Blend 3/4 of the mixture until smooth, then combine back.
  5. Whisk together milk and flour. Slowly add and stir to mixture, until heated through and is thick and smooth.
  6. Add grated cheese and stir until just melted.
