Cream of Cauliflower and Cheddar Soup
Ingredients
- 2 tbsp Butter
- 1/2 cup onions finely chopped
- 2 cups chicken broth
- 3 1/2 cups cauliflower
- 2 cups water
- 2 cups milk
- 2-3 tbsp flour
- 1 potato cubed small
- 1 1/2 cups cheddar cheese
- 1/4 tsp ground pepper
- Salt to taste
Method
- Cook onions in melted butter until tender.
- Add chicken broth, water, cauliflower and ground pepper.
- Bring to a boil and let simmer for approx 15 minutes, until cauliflower is tender.
- Blend 3/4 of the mixture until smooth, then combine back.
- Whisk together milk and flour. Slowly add and stir to mixture, until heated through and is thick and smooth.
- Add grated cheese and stir until just melted.
