Corn Chowder
Ingredients
- 250mL kernel corn, fresh, frozen or canned.
- 1 potato peeled and diced
- 1/2 onion chopped
- 1 carrot peeled and diced
- 1 celery chopped
- water
- instant chicken stock granuals
- margarine
- flour
- black pepper
- milk
Instructions
- Combine corn, potato, onion, celery, carrots, water and chicken granuals in a pot and bring to a boil.
- Reduce heat, cover and let simmer for 5-10 mins or until potatoes are tender.
- In another pot, melt margarine and mix in flour until smooth.
- Slowly add milk, stirring constanttly until smooth. Cook over medium heat until thickened.
- Add white sauce to vegetabes and stock.
- Add black pepper and salt if needed.
- Heat but do not boil.
Variation:
- Remove corn and add grated cheddar cheese to white sauce to make cheddar chowder.
- Can add ham or other meat if desired.
