Corn Chowder

Ingredients

  • 250mL kernel corn, fresh, frozen or canned.
  • 1 potato peeled and diced
  • 1/2 onion chopped
  • 1 carrot peeled and diced
  • 1 celery chopped
  • water
  • instant chicken stock granuals
  • margarine
  • flour
  • black pepper
  • milk

Instructions

  1. Combine corn, potato, onion, celery,  carrots, water and chicken granuals in a pot and bring to a boil.
  2. Reduce heat, cover and let simmer for 5-10 mins or until potatoes are tender.
  3. In another pot, melt margarine and mix in flour until smooth.
  4. Slowly add milk, stirring constanttly until smooth. Cook over medium heat until thickened.
  5. Add white sauce to vegetabes and stock.
  6. Add black pepper and salt if needed.
  7. Heat but do not boil.

 

Variation:

  • Remove corn and add grated cheddar cheese to white sauce to make cheddar chowder.
  • Can add ham or other meat if desired.
