Oxtail Soup

Oxtail Soup

Ingredients

  • Oxtail (or stewing beef, shank or flank)
  • Onion
  • Thyme
  • Green seasoning
  • Salt
  • Pepper
  • Tomatoes
  • Split peas or Mix beans
  • Okra
  • Carrots
  • Pumpkin
  • Dasheen
  • Sweet potatoes
  • Corn
  • Boucatini (long macaroni with hole)
  • Dumplings (stuffed or plain)

Method

  1. Season oxtails or cut of beef with green seasoning, salt, pepper, onions, thyme, and diced onions and tomatoes.
  2. Brown meat in pot. Add water to level of meat and pressure cook for approximately 30 mins or until soft.
  3. Add split peas or mix beans to pot with more water. Pressure cook approx 10mins
  4. Add cut up provisions as desired.
  5. Make dumplings and add to pot.
  6. Boil long macaroni and serve on the side.
