Creole sauce

Creole sauce

Ingredients

  • 1/2 red pepper 
  • 1/2 green pepper or other tasty pepper 
  • 1 medium onion 
  • 1 stalk celery 
  • 2 large ripe tomatoes
  • 2 cloves garlic
  • two stalks thyme leaves 
  • 4 large basil leaves 
  • 4 tablespoons ketchup 
  • few shakes Lea and Perrins sauce
  • 1 tablespoon sugar 
  • 1/4 cup water
  • salt 
  • black pepper  
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon tumeric (optional)

Method

  1. Dice all vegetables finely. Mince garlic. Remove thyme from sticks and chop.
  2. Heat oil in pan add garlic and all veggies. Cook a few minutes to soften
  3. Add water, ketchup and seasonings. let cook until sauce thickens.
  4. Add chopped basil leaves. taste and adjust seasonings if needed.
  5. Put in bowl to serve with Aruba style fishballs , fried fish, chicken or pork cutlettes.
  6. If no paprika or tumeric is available it can be omitted.
