Creole sauce

Ingredients
- 1/2 red pepper
- 1/2 green pepper or other tasty pepper
- 1 medium onion
- 1 stalk celery
- 2 large ripe tomatoes
- 2 cloves garlic
- two stalks thyme leaves
- 4 large basil leaves
- 4 tablespoons ketchup
- few shakes Lea and Perrins sauce
- 1 tablespoon sugar
- 1/4 cup water
- salt
- black pepper
- 1/2 teaspoon paprika (optional)
- 1/4 teaspoon tumeric (optional)
Method
- Dice all vegetables finely. Mince garlic. Remove thyme from sticks and chop.
- Heat oil in pan add garlic and all veggies. Cook a few minutes to soften
- Add water, ketchup and seasonings. let cook until sauce thickens.
- Add chopped basil leaves. taste and adjust seasonings if needed.
- Put in bowl to serve with Aruba style fishballs , fried fish, chicken or pork cutlettes.
- If no paprika or tumeric is available it can be omitted.
