Hollandaise Sauce

A. Beryl's original recipe

Great with Salmon with Leeks in Puff Pastry. Makes 1/2 cup.

Ingredients

  • 1/2 cup butter
  • 2 tbsp lemon juice
  • 3 egg yolks
  • pinch of salt and cayenne pepper

Instructions

Melt butter in sauce pan or microwave, but do not brown.  Place egg yolks, lemon juice, salt and cayenne pepper in top of double boiler.  Whisk well and pour melted butter into mixture in a steady stream, whisking constantly.  Cook over simmering water for about 5 to 10 minutes (or place in a microwave on low for 1 to 1 1/2 minutes), whisking constantly until thickened.  Makes 1/2 cup.
