Tamarind Dip

Makes ~ 1 cup

Tamarind Dip

Ingredients

  • 2/3 cup shelled tamarind
  • 1 1/2 cups water
  • 1/3 cup granulated sugar
  • 1 1/2 tsp salt
  • 1 tsp minced garlic
  • 1 tsp finely chopped cilantro
  • 1/2 -1 tsp hot pepper, finely chopped

 

Instructions

  1. Combine tamarind and water and bring to a boil
  2. Remove from heat and allow to cool slightly
  3. Crush tamarind mixture to release pulp, seeds and covering of seeds.
  4. Discard seeds and fibre.
  5. Return tamarind mixture to heat and add sugar, salt, garlic, cilantro, and hot pepper.
  6. Cook until sugar and salt are dissolved.
  7. Add cornstarch if needed to thicken.
