Aruba Fish Balls
Balchi Di Pisca
Ingredients
- 1 pound red snapper fillets or other white fish
- 1 teaspoon green seasoning or some fresh chopped thyme leaves
- 1 clove garlic minced
- 1/4 teaspoon chilli flakes
- salt and pepper to taste.
- 3 tablespoons flour plus more for dusting fishballs
Method
- Remove all bones from fish. Cut into small dices, about 1/2 inch size.
- Season and let marinate for a few minutes
- Add flour spreading in batches and stir to coat all pieces of diced fish
- Roll into balls, dust lightly in flour and place on plate until ready to panfry. Should make about 15 to 18 balls
- Heat oil in pan on medium heat. Put in balls and let brown then roll to brown all around. Do not over cook.
- Drain on paper towel.
- Serve with creole sauce, fried funchi, fried plantain, rice and a salad
