Lemongrass Chilli Sauce

Ingredients

  • 1 1/2 cup fresh chilli peppers
  • 3 lemongrass stalks, finely minced
  • 6 cloves garlic
  • 1/2 onion or 4 shallots
  • 2 tsp salt
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • 2-4 tbsp fish sauce
  • 1/2 - 1 cup vegetable oil

 

Method

  1. Heat oil on medium in pan
  2. Purée lemongrass in food processor and add to pan
  3. Purée onion and garlic and add to pan, turn down to medium low
  4. Purée chilli peppers and add to pan
  5. Add all other seasonings
  6. Cool down and bottle
  7. Store in fridge
