Lemongrass Chilli Sauce
Ingredients
- 1 1/2 cup fresh chilli peppers
- 3 lemongrass stalks, finely minced
- 6 cloves garlic
- 1/2 onion or 4 shallots
- 2 tsp salt
- 1 tbsp sugar
- 1 tbsp vinegar
- 2-4 tbsp fish sauce
- 1/2 - 1 cup vegetable oil
Method
- Heat oil on medium in pan
- Purée lemongrass in food processor and add to pan
- Purée onion and garlic and add to pan, turn down to medium low
- Purée chilli peppers and add to pan
- Add all other seasonings
- Cool down and bottle
- Store in fridge
