Ricotta Gnocchi

Ingredients
- 1 pound ricotta (425g)
- 2 large eggs
- 1 cup parmesan cheese
- 1/2 tsp nutmeg
- 1 1/4 cups flour
- 1/4 tsp salt
- 1/4 tsp pepper
Method
- Beat eggs lightly in bowl. Combine with ricotta, cheese and seasonings
- Add flour and stir with spoon
- Squeeze together dough in smaller pieces and roll into long ropes
- Cut ropes into 1 inch pieces and dust in flour
- Boil in salted water for 3-4 minutes
- Optional: brown butter in some olive oil. Pan fry gnocchi until golden
- Serve with creamy mushroom sauce, browned butter safe sauce or with tomato basil sauce
