Ricotta Gnocchi

Ricotta Gnocchi

Ingredients

  • 1 pound ricotta (425g)
  • 2 large eggs
  • 1 cup parmesan cheese
  • 1/2 tsp nutmeg
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method

  1. Beat eggs lightly in bowl. Combine with ricotta, cheese and seasonings
  2. Add flour and stir with spoon
  3. Squeeze together dough in smaller pieces and roll into long ropes
  4. Cut ropes into 1 inch pieces and dust in flour
  5. Boil in salted water for 3-4 minutes
  6. Optional: brown butter in some olive oil. Pan fry gnocchi until golden
  7. Serve with creamy mushroom sauce, browned butter safe sauce or with tomato basil sauce
