Seafood Skewers
Ingredients
- Shrimp
- Salmon
- Scallops
- Ginger, grated
- Garlic
- Soy sauce or fish sauce
- Cilantro
- Black pepper
- Lime juice (a squeeze)
- Skewer sticks
Instructions
- Thaw, clean and unshell shrimp, leaving tail on.
- Thaw and cut salmon in blocks.
- Thaw scallops.
- Season seafood with grated ginger, garlic, soy sauce, black pepper, cilantro and lime juice.
- Soak skewer sticks in water.
- Put shrimp and salmon on skewer sticks, leaving room for scallop on the tip.
- Place skewers on a metal rack over a tray and broil until browned in top side.
- Flip skewers and brown on other side, making sure to not overcook.
- Place scallops in a pan with oil.
- Cook scallops until browned on bottom, flip and cook until done.
- Poke scallops onto ends of skewers and serve.
