Seafood Skewers

Ingredients

  • Shrimp
  • Salmon
  • Scallops
  • Ginger, grated
  • Garlic
  • Soy sauce or fish sauce
  • Cilantro
  • Black pepper
  • Lime juice (a squeeze)
  • Skewer sticks

 

Instructions

  1. Thaw, clean and unshell shrimp, leaving tail on.
  2. Thaw and cut salmon in blocks.
  3. Thaw scallops.
  4. Season seafood with grated ginger, garlic, soy sauce, black pepper, cilantro and lime juice.
  5. Soak skewer sticks in water.
  6. Put shrimp and salmon on skewer sticks, leaving room for scallop on the tip.
  7. Place skewers on a metal rack over a tray and broil until browned in top side.
  8. Flip skewers and brown on other side, making sure to not overcook.
  9. Place scallops in a pan with oil.
  10. Cook scallops until browned on bottom, flip and cook until done.
  11. Poke scallops onto ends of skewers and serve.
