Gumbo

Ingredients:

 

  • 1/2 lb chorizo sausage, sliced or removed from casing and fried
  • 1/4 lb bacon chunked
  • 1 lb chicken cubed
  • 1lb shrimp, fish or other seafood
  • 2 cups okra
  • 1 can diced tomatoes
  • 1 onion diced
  • 3 stalks green onion chopped
  • 1/2 red or green pepper diced
  • 2 stalks celery chopped
  • 1 tbsp minced garlic
  • 4 stems parsley
  • 2 sprigs thyme
  • 2 bay leaves
  • 1/4 tsp cayenne pepper
  • 1 tsp marjoram
  • 1/4 tsp pepper flakes (optional)
  • black pepper
  • salt (if needed at end)
  • 2/3 cup brown rice
  • 2 cans chicken stock
  • 6 cups water
  • Roux
  • 1/3 cup butter
  • 1/3 cup flour


Method:

 

  1. Heat oil and brown bacon, remove then brown sausage, remove, then brown chicken.
  2. Cook vegetables
  3. Make roux by melting butter and whisking in flour. Keep stirring on medium to low heat until mixture turns dark brown (milk chocolate colour). May take a while (10-15mins). DO NOT BURN!!!
  4. Add chicken stock and extra water to pot.
  5. Add seasonings
  6. Put back in bacon, chicken and sausage
  7. Let it all boil up then turn down to low to simmer (or add all to slow cooker)
  8. After a few hours, add rice and chopped okra
  9. 30-45 minutes before serving, add shrimp and other seasonings
